  • 4 medium mushrooms, chopped
  • 1 green onion, chopped
  • 3 medium eggs, beaten
  • 1/4 c. shredded Monterrey Jack or Mozzarella cheese
  • 1 c. heavy cream
  • 1/4 tsp. dried tarragon
  • Dash each salt, pepper and cayenne pepper
  • 1/8 tsp. xanthan gum or your favorite thickener
