  • 1 1/2 cups sliced Persian cucumbers (from 2 small [3-ounce] cucumbers)
  • 1/3 cup thinly sliced red onion
  • 1 1/2 tablespoons extra-virgin olive oil
  • 1 tablespoon fresh lemon juice (from 1 lemon)
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
