  • 6 slices applewood smoked bacon, cut into 1-inch pieces
  • 1 cup brown roux, recipe follows
  • 2 cups chopped yellow onion
  • 1 cup chopped green onion
  • 1 cup chopped red bell pepper
  • 1 cup chopped green bell pepper
  • 2 cups chopped celery
  • 2 tablespoons minced garlic
  • 1 (14-ounce) can diced tomatoes, drained
  • 1 (12-ounce) jar roasted red peppers, drained and puréed
  • 1/2 cup Averna liquor*
  • 4 cups seafood stock
  • 4 tablespoons Zydeco Spice Mix, divided, recipe follows
  • 2 bay leaves
  • 1 tablespoon kosher salt
  • 2 pounds medium fresh shrimp, peeled and deveined
  • 1/2 pound large fresh shrimp, heads and tails left on
  • 3 tablespoons extra-virgin olive oil
  • Cooked yellow rice
  • Garnish: chopped green onion
