  • 1(10-ounce) package red pearl onions, peeled and halved
  • 1cup chopped yellow onion
  • 1cup chopped celery
  • 1/2cup chopped green bell pepper
  • 1/2cup chopped red bell pepper
  • 2tablespoons minced garlic
  • 1(15-ounce) can chopped tomatoes
  • 1tablespoon Cajun seasoning
  • 1tablespoon kosher salt
  • 2teaspoons ground black pepper
  • 2quarts seafood stock
  • 3bay leaves
  • 2dried chile peppers
  • 1pound medium fresh shrimp, peeled and deveined
  • 3dozen oysters, in liquid
  • Cooked white rice
  • Garnish: fresh parsley and crushed red pepper
