- 2 1/4 teaspoons instant yeast
- 1/4 cup (53g) light brown sugar or dark brown sugar, packed
- 1/2 cup (113g) milk, lukewarm
- 4 tablespoons (57g) butter, softened
- 2 teaspoons (12g) salt
- 2 teaspoons pumpkin pie spice, or substitute 1 1/4 teaspoons cinnamon + 3/8 teaspoon cloves +3/8 teaspoon ginger
- 2 large eggs
- 3/4 cup (170g) pumpkin purée
- 4 cups (480g) King Arthur Unbleached All-Purpose Flour
- 1 large egg, beaten with 1 tablespoon of water, for egg wash; optional
